The Easiest Summer Dessert
Summer desserts mean fresh fruit and easy fresh whipped cream in my house! There’s seriously nothing more delicious or simple than strawberries, bananas, fresh mint (this one is pineapple mint to go with my new pineapple bowl), whipped cream, and my mom’s homemade lavender lemon curd.
Eating healthy is not about restriction. Instead, it’s about figuring how to eat the delicious foods that make your mind, body, and SOUL happy. And to me, my soul isn’t happy without a little dessert. Oh yeah, I have a HUGE sweet tooth 😉
It’s super healthy too!
One of my favorite things about this dessert is that it’s made with whipping cream, fresh fruit, and mint! You don’t need anything else to make something that’s sweet and delicious! There’s no added sugar, no flour, no gluten, no grains, and it’s totally refreshing on top of being super yummy. Trust me, low sugar doesn’t mean low flavor! And since it’s low sugar, this is also a dessert I recommend if you’re looking to reduce your sugar cravings and cut down on the refined stuff.
Easy Fresh Whipped Cream
How the heck do you make easy fresh whipped cream? It’s so simple! I use an electric hand mixer with a whisk attachment to mix it until the cream is whipped and fluffy. I recommend an electric mixer over a hand whisk because it can be very tiring to do by hand 😉 I also have a whipped cream maker that pumps air into the cream as you push down on the topper, which is very easy and quick. Either way, all you need is to fluff the cream with air until it’s nice and sturdy.
Make it fancy!
You can even layer the dessert ahead of time (like a trifle) and serve it in a pretty glass bowl that everyone can scoop from. When you take the extra step to do that it looks like a pretty cake instead of just a simple fruit dessert.
But Bree, what if I don’t have all these ingredients and I want to make it right NOW?! I got you! Simply chop up your favorite fruits and add melted dark chocolate, a scoop of ice cream, or whatever makes YOU happy 🙂
Now I’m off to lick the bowl cus’ you know I already ate all the props in this photo 😉
xo Bree
