Quinoa Breakfast Bowls are the easiest solution to finding time for a healthy meal in the morning! I turned leftover quinoa into a delicious 5-minute breakfast…. and you can too! I made dinner and wound up with a heaping bowl of leftover quinoa. So what did I do? Turned the oops into something delicious! Turns out I was in LUCK…. now I have a healthy breakfast! The best part about having leftovers is that you eliminate the time it takes to cook a meal… and you don’t even have to eat the same thing twice! Last night I made the quinoa I served it with fish and roasted asparagus, but now I am using it for a whole new purpose! Trust me, it’s always a great idea to intentionally make “too much”. It’s so easy to pile on whatever toppings you love! Since quinoa has a super simple flavor, you can really go with anything. My favorite toppings include fresh fruit (strawberries, bananas, blueberries), almond butter, and my homemade Strawberry Sauce (shown in the picture below).Like oatmeal, you can top your quinoa with anything! Try greek yogurt, cinnamon, pumpkin puree, fresh fruit, shredded coconut, almond milk, nuts and seeds, dark chocolate chips, and even cacao nibs! The options are endless. Stuck in an oatmeal rut? Quinoa breakfast bowls are a great alternative to oatmeal. Quinoa tastes yummy and even packs more protein than oats! It’s always a great idea to switch up your meals a little, so give it a try!
Quinoa Breakfast BowlPrint This
- 1 cup of cooked quinoa
- Splash of water (or sub coconut milk or almond milk)
- 1-2 tbsp. of your favorite nut/seed butter
- Fresh fruit or strawberry sauce
- Add a splash of water to your cooked quinoa, then heat it up in the microwave or on the stove.
- Top with almond butter and fresh fruit (or strawberry sauce), enjoy!
