Coconut Chia Pudding is a super simple go-to snack you can feel great about eating! It’s super healthy, and since coconut milk is indulgent and rich.. it’s the perfect dairy-free ingredient for making awesomely creamy recipes! The recipe works for breakfast, snacking and as a healthy late-night dessert. It’s also completely versatile, so it’s great for adding your favorite ingredients like cocoa powder, chocolate chips, fruit, cinnamon, and even protein powder!
Coconut Chia PuddingPrint This
- 1/2 can full-fat coconut milk
- 1/2 cup chia seeds
- 2/3 cup water
- Any additional mix-ins like fresh fruit, cinnamon, vanilla, almond butter, etc. I included my vanilla protein and blueberry versions below!
- Combine the ingredients in a bowl and let it sit overnight (for best results) in the fridge. If you can’t wait that long, at least 20 minutes will work and the chia seeds will still absorb a lot of the liquid.
- Add your mix-ins if you’d like or enjoy as is!
Vanilla Protein: add 1 scoop vanilla protein powder, 4 drops of organic 100% stevia or 1 tbsp. maple syrup, and a dash of cinnamon. Blueberry: add 1/2 cup frozen or fresh blueberries.
