This a fresh and healthy Thai Chicken Salad can be whipped up in minimal time! It’s light and yummy, yet completely satisfying. Added bonus: it’s 100% free of any junky ingredients and it’s also loaded with plenty of vegetables. - Poach the chicken in boiling water, pan fry it, or grill it. I poached my chicken- to poach simply place your chicken breast in a pot and cover with water. Bring the water to a boil, then turn off the burner. Let the chicken sit covered in the boiled water until it’s cooked through (about 10 minutes).
- While the chicken is cooking, prepare the Asian Peanut Sauce.
- In a large bowl, add the cabbage, carrots, scallions, pepper, and rice wine vinegar. Add the dressing and toss it all together.
- When the chicken is cooked, shred or slice it and add it to the salad. Toss everything together and serve with chopped nuts, cilantro, and avocado!
